Enjoy the kayak. You won't notice the difference of a day or two of direct sunlight. More than that I cannot say.

Consider, also, not using varnish but one of the more UV and scratch-resistent 2-part polyurathane finishes. I did my last two kayaks with a gloss polyurathane finish and find that it is much more scratch resistant. It also goes on thicker, so it covers scratches in the epoxy better than varnish.
