SOFs require almost no sanding, or none at all if you have the right edged tools. Most of the shaping can be done with planes and spokeshaves. Edges can be rounded with cornering tools like those at the link below. It's faster than sanding and doesn't create any dust. I use mine a lot, for many different projects. I even used them to round the edges of vinyl decking material when I was rebuilding the front entrance to my house.
