Skin-on-Frame: Sewing recovery kayak

I'm in the process of sewing my 10' recovery kayak and find that I have alot of material on the back end that I have to somehow sew together. Since this material covers the keel, the deck and the stern portions, I am unsure as to how to sew the very stern. Should I sew a strip from the port to starboard or sew up from the keel all the way to the deck. Should the result be on one plane (fore to aft) or on two (fore to aft and starboard to port). I'm not sure I'm making myself clear in this description.
