Try to find a January and/or February issue of 'Woodenboat' magazine. They list boatbuilding schools and do an annual update at the beginning of the year.

I've seen course descriptions of 4 or 5 different classes offered across the US. All of them have small class sizes, so they may fill quickly when they are offered. Tuition doesn't usually get you a boat. Generally each class works together to complete one boat. That boat may be raffled off to one student, sold to a student, or it may stay the property of the school or organization which offered the class.
