Just to remember that this all depends on kayak shape. Most lowish volume greenland style kayaks have high draft/waterline beam ratio. Many times this means that the kayak will float ok with less displacement.

However some high volume kayaks will float quite high without additional load. If you lower the displacement even more the end result can be narrower waterline beam and lower stability.

So you might notice more or less stability with displacement change.
