The original skis were carved from foam blocks, lots were done by guys that had carved surfboards, so used a similiar technology. It can certainly be done that way, but there are several downsides, the foam is heavy in blocks and not cheap, it's hard to get both sides of the boat the same and when finished there's no room inside for storage (ok if you're making a ski). If you're starting without surfboard carving experience, it's just easier to learn strip building. Still, there are lots of ways to skin a cat :)
