Skin-on-Frame: stringer material

I'm hoping to finally make the transition from lurker to builder this winter. I always planned to build a S&G and one of the obstacles has been clearing enough space in my basement. Now I'm thinking that a Yost style SOF would allow me to get started making the pieces without needing so much space. Also, the basement is cold and using epoxy could be challenging. I'm sure I'll have lots of questions, but the immediate one is about wood for stringers. I have some red cedar clap boards left over from the house. They're wedge shaped in cross section, but if I stack 2 they make a piece 3/4" x 5.5". Would laminating them effect the way they bend, and would it be worth the trouble? Thanks!
