The guy you want to talk to is Ralph Frieze of the Chivagoland Canoe Base. He is, or was, the leading maker of Voyageur canoes in the US. There is a very small market for these big canoes, which may also be called freighter canoes or war canoes.

To my knowledge Ralph sold the business several years ago, but still comes around.

Searching his name and 'Chicagoland canoe base' on google or siimilar search engine should get you a phone number for the store. Thy may sell plans for a strip version, or have offsets and measurements you can build from.

I think it is highly unlikely you'll find patterns for stitch and glue construction. But, if you make station molds and bend wood chines around them, spacing the chines about 100 mm to 125mm apart at the middle of the boat, you can set plywood panels on these , and use a pencil to draw along one edge of a wood strip to mark a cutting line on the plywood. That should give you the panel shapes for your stitch and glue project. If you choose to use screws or nails and glue to hold the panels to the woodstrips then you are building in a style called 'plank on chine' , which is similar to S&G.
