Skin-on-Frame: Yost Sea Flea - Keel *LINK* *Pic*

I've just started a Yost/Sea Flea build for my daughter. I've started drawing out the cross sections onto foam board (that I'll later transfer to wood). I have plotted the offsets and connected the lines. I'm starting to draw out the stringer cutouts, concave sides and whatnot.

I have a question about the keel line and it's cut out. On Tom's page, he is using a 1" x 5/8" stringer for the keel. In the picture, the stringer seems to be 1/4" lower than the bottom of the stringer:

I guess my question is- would the Sea Flea that I'm building match this (i.e. would it be 1/4" lower)? Or, would it be a different amount? Or would it actually matter?

I've looked at Pawistik's blog and reviewed his pictures. He seems to have some amount of overhang (the image shown below), but it's not real well shown in any of the pictures.

Thanks in advance. I'm not much of a builder... we'll see how this goes!
