Many inflatables are made specifically for whitewater use, and you probably needn't be overly concerned about punctures if you have one of those. The Saturn ones look like whitewater boats, for the most part.

If you do get a hole, well, I suspect duct tape would work OK for a quick fix, as long as everything was dry. However, for real repair of PVC material, you might consult Tom Yost's website. He has complete instructions for how to make your own inflatable kayak (and many SOF kayaks, too) from PVC fabric. His gluing instructions would work equally well for kayak repair.
