Strip: Short double advice

I am looking for advice on building a short double kayak. The intended use is short day trips on flat water with the two kids. Right now I have a 14 foot Great Auk (Nice boat Nick!) and a 17' Endeavor. The problem I face is that I have two boats and four paddlers. So I can either build two boats at the same time, or build a double. I am thinking that something with a large open cock pit which could be paddled single (by moving the seat to the middle) would be perfect. This is about comfort, not performance. Any Ideas? Thanks in advance.
