Skin-on-Frame: seats of wood builds vs SOF

As I look at the posts for strip and S&G, I notice the seats are large foam masterpeices while SOF tend to be a peice of camping mat. The reason for the camping mat is the lower center of gravity. Why don't strip or S&G need as low a center of gravity? What am I missing?
