Hard to pour the epoxy I'd suspect anyway 1/2 way down the length of the boat, thickened with anything I'd think would make it more difficult to pour.

Like I said, I don't do it that way, I use internal stems that are gooped into place with very heavily thickened epoxy putty. I use just enough epoxy to keep the mixture stuck together, so it's pretty light and I do this well before the deck is added, much easier without the deck in the way :)
