I've used it as a thickener for epoxy coated paddle tips and have never had any problems with it in the water. If you're finding that it's soaking up water, it probably means that it's not mixed well enough into the epoxy.

That said, I've also found that it's not as thixiotropic as fumed silica. It will thicken epoxy to the point that it runs slower, but that's about it.
