An extra comment. With the hull upright you can check for twist by laying a few straight planks accross the gunwhales (middle and both ends about 3 0r 4 ft in) and then check with your eyeball to make sure that they are all parallel.

Some people leave the wires in but you will get a cleaner job if you fill the grooves between the wires with thickened epoxy ( a vetinary syringe is good for this) and when it is set pull out the wires and fill in where they were located before filleting. I assume you were going to do this, but you never know.
