Epoxy: Epoxy Characteristic

I've just started my first kayak, an S&G Folland Sea Wolf. The kit come with East epoxy, which seem to me to work fine. Trying to keep things tidy, I masked off plywood and sheer faces where I didn't want extra epoxy to run. I did a wet out coat, followed by a thickened 'glue' coat while the first coat was still wet. Except for the fact that I used too much epoxy, I'm pleased with the joints I've made. But epoxy had gone under the masking tape, so the plywood now has a ragged line instead of the neat line I'd expected. Is this normal? Is there a way to make a clean edge?
