There are two ways to read this question. One is that you GPS doesnot have a track log, or at least one that you trust.
The other is that when in the swamp; your GPS doesnot get sufficient reception. My garmin is like this, great tracklog, but will loose satelites on a well treed trail.
Ohter than experience, and comparing effort wiht known distances. etc.
I suppose that you could rig a shooters windgauge into a waterspeed gauge
