I did that once. There's nothing wrong with wet-on-wet lamination with polyester resin. Unless there's something drastically wrong with the chemistry (like, that wasn't catalyst), if you bring the temperature up to around 70 degrees, it'll cure. The only problem you might encounter with the delayed cure is some drainage of resin from the laminate, leaving undersaturated areas. In my case, I was reinforcing a GRP rowing shell with a layer of glass inside, didn't cure at all overnight in weather similar to yours, but the next day was sunny and 60, so I put it outside - the combination of somewhat higher temp and UV from Mr. Sun cured it in half an hour. One more thing - DON'T spray catalyst on the surface; bad juju.
