S&G: Auk vs. Merganser

I have spent the last 2 days searching the archives for information regarding kayak design and am trying to decide upon a design for both my wife and I. I am 6'-1" and weigh 250. I carry alot of weight through my back and shoulders (lift weights), but lets face it, I'm 250 and have a gut (I would have to look like Arnold to carry 250 and I don't look like Arnold!). My wife is a solid 130 at 5'1". We are looking for designs that can be used in the winding tidal marshes and bays around the Georgia Coast, and the slow spring fed rivers of Florida for exploring, fishing, and stability (I want her to feel safe). We built a nice Prospector canoe a year ago (strip) but am leaning toward a pair of hybrid kayaks this time around. I like the Merganser (seems to have several options for different sizes), the Cirrus (maybe not as flexible), or possibly go strip again with an Auk design.

Given the body sizes listed, our wanting something recreational and stable to fish, photo, etc..., and the preferance toward hybrid design for a little something different, are their any suggestions?
