Seeking: Cape Ann Double or Guillemot Double?

I'm posting a question here that I couldn't find a specific answer to in the archives (or so I think). I am trying to decide between the "aforementioned" designs. My wife and I are looking to expand our paddling into some of the barrier islands and coastal marsh of Georgia and are leary of taking our Prospector into such areas. We are recreational paddlers and will limit our use to sightseeing, fishing, exploring and maybe some overnight camping. I'm large framed and am dieting back to a fit weight of 200lbs, 6'-0" tall, size 11 1/2 shoes. My wife is medium framed, 125 lbs., 5'-1", strong paddler. We are not terribly experienced, but capable. We are looking for something comfortable, stable, ect... I will equip my choice with a rudder. I have ordered Nick's book and know there are offsets provided for his design. Perhaps if the design's characteristics are close enough, this is enough of an edge to favor the Guillemot. Thanks for any insight.
