I tried the foam and plastic bag trick, bags leaked and foam took on water after the secound wet exit in 4'to 6' breaking seas. For a race yak you should build it with the optimized for one paddler, use the front bulkhead as foot rest, save the weight of foot pegs. I'd say Paul's dead on about the need for haveing the bulkheads for structural reasons.
