Sorry to hear of your allergic reactions, hopefully you'll be able work around the species that's giving you problems, and not become allergic to any others. Don't take any further chances - wear a respirator. I don't know anything about these wood dust allergies, but I offer my sympathy.

As for your rosewood sandings coloring your cypress, it shouldn't be a big deal, as long as you carefully sand the cypress to clean it up, before applying any epoxy. Try running a shopvac as you sand around your inlay, haven't tried it, but it should help. Also try wiping the area with a clean tack cloth as you sand, again I don't know if it would help, but it shouldn't hurt to try.
