S&G: Strip (SB) vs. Stitch & Glue (S&G)

I am interested in opinions of SB vs. S&G. Would it be accurate to say that SB is almost 2x more $ then S&G (as I don't have the tools, I would have to build from a kit; or buy pre-made strips for SB)? I really like the look of the SB, but as a new builder, I want to start out with the least expensive. As a S&G will be hard chined, what are the performance differenced between hard chined and not? Can a hard chine have as good secondary stability as a smooth rounded kayak? Any recommendations on kits (for a double). Currently looking at the CLC and San Javier models. Thanks for any thoughts/recommendations!
