You should read posts, or - better yet - write to, Todd Bradshaw on the WoodenBoat forum. He builds canoe/kayak sails professionally, and wrote a great book about it, too ("Canoe Rig: The Essence and the Art"). He frequents that forum, and would no doubt be very happy to answer any questions you might have.

Another resource might be sailrite. They will sell you a sail "kit," pretty cheap. http://www.sailrite.com/
