I tend to over finish my kayaks and then paddle them a lot and beat them up. So if you are just going to look at it, polish it (I have polished check the archives for details). If you are going to paddle it, just go paddling.

I have discovered Zspar Captains will fill scratches from 320 grit sandpaper so going finer between coats is a waste of time.
