Strip: Modifying the Pt Bennett

The nice man who designed and gave away the plans for the Pt Bennett was kind enough to answer my querry re the size of me and the boat.
Made me wonder if building the hull as S & G and then stripping the desk might give me a chance to lower the deck without redesigning the boat. I am not an engineer type and lofting and planning out the panels seem a huge task.
Has anyone done a different deck set up for the afore mentioned boat. Duane thought the deck might be too high for really easy paddeling but that my fat thighs might need the room. I guess I could drop 40 pounds, then it would be an easier choice. Just wondering.
Would it be a nightmare for a first build?

News update this weekend I have two training classes scheduled, an all day paddeling technique class and a half day into to rolling class. So if I survive to see Monday I would realy like to get a boat started, shooting for funded and built by Spring '08. (Please pardon typing and spelling mistakes)
