Hi Bryan,
An offset skeg will work just as well as a centerline one. As long as it's parallel to the keel.
I've seen this done on a few lightweight dinghy's centerboards. It keeps the full strength of the keel without doublers (added weight) and lessens the likelyhood of jamming with dirt.
