Just looking the linesplan picture of Illorssuit kayak and I don't see much problems in it.

It's said that both Taylor's and Heath's kayaks from Illorsuit have quite unusual keel line from aft of cockpit. Most likely they both are not broken in same way so it should be intentionally created shape. Unusual but for me it looks there are similar curves in keel lines of some other kayaks.
