If I go out to my over twenty year old double glassfibrekayak and smell inside
I can still smell the styrene from it. So NO polyester!
The epoxy I use is in cured condition allowed to be used in contact with food.
There is no chemical dispersion from it. But for a baby to chew on, NO.
The dust from cedar is, what I know, a bit poisonous and soft so I would make the chewable parts from some more suitable wood, spruce, birch or aspen.
I wouldn´t take any mineral oil. Try to taste mineral oil yourself and you see what I mean. I would choose the finest linseedoil I can find, saturate the wood and polish with a cloth. A good light oliveoil will do too.
