The redwood planks I buy locally are approximately 11/16" thick. I cut 1/4" strips from them. The thinner stock made my strips more flexible had they been a full 3/4" wide, but I'm sure they would still work fine if thicker.

Also, I milled my strips with cove & bead, and since that removes material from the edge, it made the strips more flexible as well.

The Guillemot's hull is not hard to strip. It doesn't have the hollow areas in the bow (and stern?) like its big brother the Expedition Single. I've not built one of those, but I've heard that the curve in that area can be a bit troublesome to strip. I'm sure the Guillemot is easy in comparison.
