I looked at the plan sets for both CLC boats that I've built and they both include a section through the hull at the middle of the boat. If the Chesapeake plans show a similar section, you can measure the angle the bottom panels make with the horizontal directly from the plans. You can also use the section to determine the design width of the hull at the chine. If the panel widths are correct and the width at the chine is correct, then the angle of the Vee of the hull will also be correct.
