= less abrasion resistance (=damage to the wood when the paint/epoxy coatings are scratched through)

I wouldn't build a boat without exterior glass for anything but the lightest of use (i.e. flat water, no rocks/treestumps). You could go with thicker wood to make up for it, but then you end up with a barge. A pretty barge, but a barge nonetheless. On the maiden voyage of my first kayak, a Pygmy Arctic Tern with the standard layup, I was paddling in a small lake with no waves, and managed to park the kayak on top of a barely-submerged stump. It left a stress-whitened streak in the cloth where I ground to a halt and then a zig-zag from wiggling myself off of it.

I suppose you could pre-glass the outside of each lapstrake panel before installing it, but the joints would be your weak points.
