I made a Guillemot 18 by spacing the forms an additional 3/4" between every form. Don't add size + additional spacing to the forms unless you're a pretty big person.

Have you paddled a Guillemot? Unless you have, it's hard to know what you like/dislike about it, and what/why you want to change. It is a VERY stable boat, even at 21" wide. Roominess is possible by increasing the forms' height just a little--a little increase here adds a lot of volume, so you don't need to add much.
