Sounds like you had a nice trip despite the "flaws". Try making a little temporary skeg about 12" long, 1" high and 3/4" wide and stick it near the back of your boat with silicone RTV caulk. Paddle with this and bring along a plane. Plane away at the skeg until you feel you have a good balance. If it is too small peel it off and install a bigger one. Then you can either varnish the skeg and leave it there, or peel it off and do some more permanent solution based on the size you found.
