While it might work, I think you would be better off with no end pour than with making one from the polyester resin. Or, buy a small quantity of epoxy.

Polyester resins do not have a great bond to epoxy resins. It is good, but not as good as epoxy bonding to epoxy.

The surface of polyester takes a long time to lose its tackiness when it is in air. The material you purchased may have a wax, or some styrene plastic, dissolved in it. This would be good. These materials will rise to the surface of the resin as it sets up, and seal that surface from the air. If so, the surface will harden. However, if you have the type of resin which does not have the wax dissolved in it, the material will cure through most of its thickness, except on the surface, which will stay tacky for quite a while.

If you have some scraps that you can use for a trial, mix up a small batch of the polyester resin and try it. See if you like the result.

On the other hand, Spidey says that some people near him use polyester resin over epoxy on their surfboards.

Is an end pour really necessary for your boat?
