Look in Nick's book on pages 8 and 9. There is very good information on primary and final stability. Final stability is determined by what is above the water line. Flat bottom and vertical sides or flat bottom with flared sides show the most final stability. Not what most people expect.

Sounds like you are thinking things out well and planning ahead. The primary type of paddling you will eventually do is important. Day paddling, lightly loaded, rough water, big waves, pushing the envelope, don't mind being on edge or bracing a lot = one type boat.

Most any design out (commercial or good homebuilt) can be braced in most any conditions even that adventurous paddlers encounter. I've seen a number of boaters who wanted a "real performing kayak" trade them off when they realized in most conditions they were too tender, to the point they didn't relax while eating lunch, looking around, trying to enjoy scenery with following seas, using binoculars or cameras.

Look at surf boats, wide flat bottoms; a lot wider and flatter than even the old Chinooks. You can side surf BIG waves with an aggressive lean and brace.

The boats you mention are good. Get something you like the looks of and you feel comfortable with the size. A cockpit custom fitted for your body, comfort and boat control is important. That will let you control in most any conditions.
Think of your overall enjoyment as you pick.
