Jay,
I am building a Great Auk using cypress. It works ok, but is not as good as the Douglas Fir that I used for my Guillemot 17. I am using 1/4 inch thick by 3/4 inch wide strips. If I build another with cypress, I will go with 5/8 inch wide strips, so they will bend better. If you are building a kayak that stress the strips, you may want to do that also. The cypress is splintery. The edges of the coves are very fragile. It fairs out fine. The cypress that I have does not have a lot of different colors and some of the grain is kinda wide. Will I build another kayak from cypress? Probably. I also got my cypress free.
