Go for the dookie schmutz. The 3M adhesive might be appropriate for foam bulkheads (I haven't tried it). I doubt you will want any flex or play in your plywood joints. The cockpit area is subject to lots of stress on entry/exit; the epoxy will give you a very solid structure that holds up to just about anything you throw at it.
