Pygmy ( http://www.pygmyboats.com/Default.htm ) sells plans for the Osprey double.

CLC ( http://www.clcboats.com/sitemap.php3?cart_id=CREATE ) sells plans for the Chesapeake Double and the Mill Creek 16.5

Both Pygmy's Osprey Double and CLC's Chesapeake Double would be good in protected water as well as in more exposed conditions. The Mill Creek 16.5 has an open cockpit, so I wouldn't want to take it out on the ocean with big waves. However, the Mill Creek 16.5 is the most versatile boat of the three. It can be paddled by two people, or one person. It can be rowed. It can be sailed.

The plans from CLC come with full sized templates of the panels. The only problem with them is that they are all drawn on top of eachother, so you can't cut them out and glue them to the wood. You need to transfer the marks with a pounce wheel or by poking a nail or something through the paper to the wood below. The plans also come with a table of offsets, wich is very easy to use. You basically plot a bunch of points with a tape measure and square and then you connect the dots using a long thin straight piece of wood. The instructions for all of this comes with the plans. CLC sends you two booklets of instructions, the plans, and the template when you buy their plans. They are pretty easy to understand if you read them over once or twice before starting.

I have no experience with Pygmy's plans or kits.

The important thing for you right now is to familiarize yourself with the building process for stitch and glue kayaks. Go to their web pages and read everything. It will answer all the questions you have, and many you didn't know that you had. It cant hurt to read a book or two on the topic. The Kayak Shop, and The New Kayak Shop, both by Chris Kulczycki are good books.
