I'm just finishing a S & G Shearwater Baidarka. I've got a cottage across the lake from you (south of Matlock Beach). There is a kayak club at the University of Manitoba that paddles one night a week in the pool all winter long, followed by a cold one and lots of kayak talk. Costs $20 for the year, a great deal and a great bunch of guys. My paddling buddy and I learned to roll in the pool last winter, the other members are super helpful, age range from about 17 to 70. Let me know if your interested I'll pass the info on to you.

When are you expecting to launch the guillimot? You really should have an audience, I'll bring the champagne!
