Rdm, I would advise against using expaning foam. You might as well fill the whole boat with the stuff except for your cockpit area for it to be truly worthwhile. Then at that point you'll still have to contend with moisture settling next to the foam and hull since the hull will flex slightly and the foam won't. From application to use it's not a good idea.
