No special care other than 'normal' shop procedures. The hull and deck are mated during stripping, fairing and sanding. The hull is turned upside down (cove now facing down) for glassing so the cove is more-or-less protected - possibly a bit of care required in trimming, but you should do that anyhow. The deck has a bead edge exposed, so there's no problem there. And it's not as if a 'tough' wood was used - the 'double-coved' sheer strip is western redcedar (seeing as I live on the south coast of Brtish Columbia, what other than our provincial tree would I use??!!)

Perhaps I've been fortunate in not needing any trimming to get a fair hull/deck join - but I believe that part of the credit is to the positive join of a cove and bead. Ropes, wooden wedges and packing tape gave a tight fitting seam for the inside application of the sheer fibreglass tape.
