the conventional method for lifting/holding a kayak is a toggle mounted through a hole in the ends. Carrying is best done holding the whole boat. You could mount a toggle on a big brass pad eye, marine hardware store item or Jamestown Distributors. I'd be shy about any ring that you could get fingers caught in. Rings/shackles are ways of connecting lines to smaller fittings.
