Attach the new gunwales prior to removing the old ones. If I remember correctly, you (like me) added lots of extra girder beams between the gunwales and chine stringers so you'll have lots of solid attachment points. Then take a flush Japaneese saw and cut allong the top of the new stringers. Add new flush deck beams. Recover the old cockpit and install. And presto, You've got a chopped kayak :)
Since it's chopped, you'll need a custom paint job and maybe a set of fuzzy dice hanging from your paddle ;)
