Adapting a 3-section Romany design to a wood kay

Nigel Dennis produces a Romany that comes in 3 sections. Each section has its own separate bulkhead and is pinned together front and back abutting to the adjacent section. It is totally watertight. I am wondering about the feasability of adapting that design and building a strip kayak using a similar method. Would you complete the yak and then cut it into 3 sections (basically 2 cross-cuts) and then build the bulkheads into the end sections. Why even do this-- the 3 sections could be packed and taken on airlines as extra baggage, much like the folding kayaks. Thanks for any advice.
