I did that on my CLC. On the plus, it was easier to install the deck because I put a temporary clamp on the outside, and stapled the deck to it. Then I removed the temporary, planed the deck down to the hull, and put a rub rail in to cover the holes. But now it's pretty dinged up, even after coating with epoxy. If you do, I'd suggest a hard wood, not redwood.
