I asked the similar question about a week and a half ago... I went to amazon and found Nick Schade's book The Strip - Built Sea Kayak. I am excited and happy to say that after about 2 hours reading, I went out and got some graph paper to start plotting the forms (started off a bit confusing, but after the first form, piece of cake). I am now deciding on what type of wood for my strips... anyway, I recommend Nick's book: very informative, easy to read, and full of three plans to make kayaks... GOOD LUCK !!! Hope you catch the bug like me !
