Just in case you were literally thinking of a cylinder (round cross section)and conic ends; the transition points between the two would be big drag producers and a cylinder is not a good hull section. The result would be a boat both slow and unstable.

If you were just figuratively thinking about this, I know of at least one kayak manufacturer uses the install-double-bulkheads-and-cut-it-into-pieces-afterwords method. But maybe that just allows him to build one-piece and sectional boats from the same molds.
