I thought about this one too on the Guillemot I'm building. It's up to you really. I think if you wrap around you will need to make a cut across at the sheer.
I decided wrapping around was not worth the extra work, and I'm happy with the result. I just planed and sanded the stem so it tapers out just as it reaches the sheer, rather than an abrupt cut off.
