Hypalon vs. Polyurethane

First time builder with a first time question. I'm building a 17' x 23" x 12" Greenland style skin on frame. I did incorporate a slight raised deck. My intended use is bigger lakes (Voyageurs National Park, maybe Lake Superior) and slow river rambling. Decided to cover the haul with 3.7 oz. aircraft dacron and apply Hypalon. I now know that the Hypalon contains products that can fry your brain if not handled and applied properly.

I need to know if other S. on F. builders have experience with Hypalon application methods on such light fabric vs. several base coats of exterior polyurethane and a finish coat of a product "GacoFlex UA-7000". The manufacturer claims that this stuff is super tough.

Comments and advice??
